Located in La Jolla, Katsuya Ko marks the first evolution of Chef Katsuya Uechi’s Michelin-recognized legacy, translating the prestige of fine dining into a high-performance, fast-casual environment. Our studio provided a holistic vision that prioritizes spatial choreography and structural refinement, reimagining the traditional sushi bar as a streamlined, “high-end convenience” destination. The interior architecture utilizes a meticulous balance of heritage-inspired materiality and modern geometric forms, creating a physical framework that supports rapid throughput while maintaining a sense of permanent, high-design gravitas.
The project’s spatial identity is defined by a bold interplay of saturated color and environmental graphics that function as architectural markers to guide the user journey. By harmonizing a digital-forward operational flow with sophisticated interior detailing, the design establishes a scalable prototype for the Katsuya brand. This architectural approach successfully bridges the gap between the intimate atmosphere of heritage Japanese dining and the rigorous demands of a contemporary, high-speed urban audience.
